Place the garlic cloves in the mortar.

Add the bell pepper and chili pepper to the garlic.

Grind the garlic and peppers in the mortar until smooth

Add the fresh coriander and dill to the mixture.

Grate the lemon zest over the mixture.

Add salt, black pepper, fennel, dried coriander, and cumin.

Pour the olive oil over the marinade.

Add the juice of one lemon.

Grind all ingredients again until well combined.

Make small slits in the fish to allow the marinade to penetrate.

Rub the marinade on the fish, inside and out, including the slits.

Place the marinated fish on a baking tray.

Put the tray under the grill or in an air fryer for 15 minutes per side.

Mix olive oil, lemon juice, and some grill marinade, and baste the fish with this mixture midway through cooking on both sides for better flavor and moisture.
