- 1Psc.Chopped Onion
- 2Tablespoons (tbsp)Chopped celery

Steps

Put water in a large pot and bring it to a boil.

Add the diced potatoes to the boiling water.

Add the diced carrots and let them start to cook.

Add the red lentils after the potatoes and carrots begin to soften.

Add the salt and stir well.

Add dried coriander, cumin, turmeric, and pepper to taste.

In a frying pan, heat olive oil over medium heat.

Add the chopped onion and sauté until soft.

Add the chopped celery to the onion and sauté for 2–3 minutes.

Add the chopped fresh coriander to the pan and stir briefly.

Take a portion of the soup and add it to the onion-coriander mixture in the pan.

Return this mixture to the large pot with the rest of the soup and stir well.

Blend the soup using a hand blender until smooth.

Pour the soup into serving bowls.

Garnish with fried or toasted bread.

Squeeze a little lemon juice over each bowl before serving.
