Steps

    We soak the chickpeas overnight

    We rinse the chickpeas thoroughly after soaking.

    We place the chickpeas in a pot, add water, and let it boil, removing the white foam.

    After boiling, we reduce the heat, add a quarter teaspoon of baking soda, stir the mixture, cover the pot, and let it cook for an hour.

    We peel the garlic, add salt and fresh coriander, and mash them together. Then, we add lemon juice and tahini, followed by the chickpeas with a little chickpea water, and mash the ingredients a bit.

    We place the mixture in a serving dish and garnish it with tahini, coriander, paprika, cumin, and olive oil.
