Steps

    We wash the lentils well, then place them in a pot with water and let them cook for 25 minutes until tender.

    In a skillet, we heat the olive oil, then add the olives (if using) and the onions. We add salt and continue to stir the onions until they become very brown.

    We lower the heat and take some of the lentil water to add to the onions, then cover the pot and let it sit for 7 minutes.

    We add the onion mixture to the lentils. Then we wash the bulgur and place it on top of the lentils.

    We add salt and olive oil, and leave the mixture on the heat until it is cooked through.

    We serve the mujaddara with salad or yogurt as desired.
