  • 0.75PinchSesame
  • 550Tablespoons (tbsp)Animal Ghee
  • 1Tablespoons (tbsp)Baking powder
  • 1CupWarm water
  • 350CupHoney

    Sift the flour into a large bowl.

    Add mahleb and sesame; mix dry ingredients well.

    Pour hot ghee and stir with a wooden spoon until slightly cooled.

    Transfer the mixture to a mixer and knead until dough cools completely.

    Add baking powder and warm water; continue kneading for 10 minutes.

    Test dough readiness by rolling a small piece; it should hold shape without cracks.

    Flatten a piece of dough in your hand, fill with ajmiya, and seal well.

    Stamp the cookie with a kahk mold.

    Arrange cookies on a baking tray.

    Bake at 180°C for ~25 minutes until bottom is golden, top slightly pale.
