Ingredients

  • 4CupGreen olives
  • 5Psc.lemon
  • 2Tablespoons (tbsp)Coarse salt
  • 0.5Teaspoons (tsp)Citric acid
  • 0.5Teaspoons (tsp)Turmeric powder
  • 0.3CupOlive oil
  • 1Cupwater
  • 1CupOil

Steps

    Prepare the green olives according to the type and size available or preferred.

    Make slits in each olive using a knife.

    Place the olives in water and change the water twice daily for 5–6 days.

    Drain the olives from the water after the soaking period is complete.

    Add the sliced lemons, coarse salt, lemon salt, turmeric, and olive oil to the olives.

    Mix all the ingredients thoroughly with the olives.

    Place the olives in sterilized jars.

    Add the liquid that drained from the olives into the jars.

    Place large lemon slices on top of the olives in the jars.

    To prepare the brine solution, mix water with the tablespoon of coarse salt.

    Pour the brine solution over the olives in the jars until fully covered.

    Add olive oil or any other oil on top of the olives.

    Seal the jars tightly and leave them overnight to prevent the olives from overflowing.
