Steps

    Sauté the duck with onions, carrots, whole peppercorns, cardamom pods, and bay leaf in a large pot.

    Add cold water to the pot and let the duck cook for an hour and a half

    Sauté the diced onion in some oil over medium heat

    Add the rice, salt, black pepper, 7 spices, and Chinese cubeb spice to the sautéed onions.

    Stir the ingredients well to combine the flavors.

    Add the duck broth to the rice and cover the pot.

    Let the rice simmer on low heat until fully cooked

    Once the duck is cooked, remove the skin and separate the meat from the bones.

    Place the duck meat on top of the rice.

    Season the meat with black pepper and salt.

    Cover the pot and let it cook on low heat for a few more minutes.

    Garnish the dish with roasted nuts before serving.
