We place (2 eggs, vanilla, 1 cup of water - 200 ml, 1 cup of flour - 135 to 150 grams depending on its type and moisture level) in a bowl.

نقوم بوضع (2 بيض، فانيليا، 1 كوب ماء 200 مل، 1 كوب دقيق من 135 إلى 150 غرام حسب نوعه ورطوبته) في وعاء.

We whisk the ingredients well until we get a smooth mixture, then strain it to ensure there are no lumps.

نقوم بخفق المكونات جيدًا حتى نحصل على خليط متجانس، ثم نقوم بتصفيته للتأكد من عدم وجود أي تكتلات.

We heat (corn oil) in a deep pan until it is hot, then dip the rosette mold into the hot oil.

نقوم بتسخين (زيت الذرة) الغزير على النار جيدًا، ثم نغمس قالب الوردات في الزيت الساخن.

We place the mold into the batter, ensuring that the batter does not touch the back of the mold, as shown in the video.

نقوم بوضع القالب في الخليط مع التأكد من أن العجينة لا تلامس ظهر القالب كما هو موضح بالفيديو.

We fry the batter in the oil until golden brown, then remove it and let it drain.

نقوم بقلي العجينة في الزيت حتى تصبح ذهبية اللون، ثم نرفعها ونتركها تصفى من الزيت.

We garnish the rosettes with (powdered sugar and date molasses) before serving.

نقوم بتزيين الوردات بالسكر البودرة ودبس التمر ثم نقدمها.

Mix (ground rice flour, water, caraway powder, cinnamon, sugar) in a pot while cold, stirring until fully dissolved.

نقوم بخلط (الأرز المطحون، الماء، بودرة الكراوية، القرفة، السكر) في وعاء على البارد حتى تذوب جميع المكونات جيدًا.

Place the pot over medium heat and stir continuously until the mixture starts to thicken.

نضع الخليط على نار متوسطة مع التحريك المستمر حتى يبدأ في التماسك.

Keep stirring until the pudding reaches a smooth and thick consistency.

نستمر في التحريك حتى يصبح القوام سميكًا ومناسبًا للتقديم.

We pour the mixture into serving cups and leave it to cool at room temperature, then place it in the refrigerator to chill completely.

نقوم بصب الخليط في أكواب التقديم ونتركه ليبرد بحرارة المطبخ ثم ندخله إلي الثلاجة ليبرد تماما

Garnish with (shredded coconut, almonds, pistachios, pine nuts, hazelnuts) and serve immediately.

نزينه بالمكسرات (جوز الهند، اللوز، الفستق، الصنوبر، البندق) ونقدمه مباشرة.

We cut each chicken breast into two halves, then place it between two layers of plastic wrap and gently pound it as shown in the video.

نقوم بتقطيع كل صدر دجاج إلى نصفين، ثم نضعه بين طبقتين من النايلون وندقه برفق كما هو موضح في الفيديو.

We season the chicken with salt, black pepper, and a little flour.

نقوم بتتبيل (صدور الدجاج) بالملح والفلفل الأسود، ثم نغطيها بطبقة خفيفة من (الطحين).

We heat butter in a pan and fry the chicken breasts until golden brown on both sides.

في مقلاة على نار متوسطة، نقوم بإذابة (الزبدة)، ثم نضيف (صدور الدجاج) ونقلبها حتى تتحمر من الجانبين وتنضج

Remove the chicken from the skillet and set aside

نقوم برفع الدجاج من المقلاة ونتركه على جنب

In the same skillet, add the lemon juice, then add the butter, black pepper, and lemon zest and bring to a simmer

في نفس المقلاة نضيف عصير الليمون ثم نضيف الزبدة والفلفل الأسود  وقشر الليمون ونتركهم على النار قليلا

Return the chicken to the skillet, add the kippers and let it sit with the sauce until the ingredients are homogenized.

نقوم بإعادة الدجاج الي المقلاة ثم نضع الكيبرز ونتركه مع الصوص حتى تتجانس المكونات

We boil the potatoes without the skin and mash them.

نقوم بسلق البطاطس بدون القشر ثم نهرسها.

We add salt, black pepper, butter, cooking cream, and parmesan cheese to the mashed potatoes.

نضيف الملح، الفلفل الأسود، الزبدة، كريمة الطبخ، وجبنة البارميزان إلى البطاطس المهروسة.

Finely grind the bulgur with the meat in a meat grinder.

نقوم بطحن البرغل الناعم مع اللحمة في ماكينة فرم اللحمة.

Add the chopped onion, salt, black pepper and basil (you can add marjoram or cilantro to taste) to the mixture.

نضيف البصل المفروم والملح والفلفل الأسود والريحان (ويمكن إضافة المردقوش أو الكزبرة حسب الرغبة) إلى الخليط.

Gradually add water until you get a firm consistency.

نضيف الماء تدريجيًا حتى نحصل على قوام متماسك.

We grind the kibbeh in the meat grinder three times, twice using the coarse side and once using the fine side.

نقوم بفرم الكبة في المفرمة ثلاث مرات، مرتين باستخدام الوجه الخشن ومرة واحدة باستخدام الوجه الناعم.

Prepare the filling by browning the onions in ghee, then add the minced meat with salt and black pepper until the filling is cooked, then add the toasted pine nuts.

نقوم بتحضير الحشوة عبر تحمير البصل في السمنة، ثم إضافة اللحمة المفرومة مع الملح والفلفل الأسود حتى تنضج الحشوة ثم نضيف الصنوبر المحمص

Allow the filling to cool completely before using it.

نترك الحشوة لتبرد تمامًا قبل استخدامها.

Grease a tray with ghee, place a layer of kibbeh, followed by a layer of filling, then add another layer of kibbeh.

ندهن صينية بالسمنة، ثم نضع طبقة من الكبة، تليها طبقة من الحشوة، ثم نضيف طبقة أخرى من الكبة.

We cut the kibbeh in the old Damascene way as shown in the video

Make a small hole in the center and add olive oil to the kibbeh to prevent it from drying out, then add ghee to develop the flavor.

نقوم بعمل فتحة صغيرة في المنتصف ثم نضيف زيت الزيتون على الكبة لمنع جفافها، ثم نضيف السمنة لتطوير النكهة.

We roast the kibbeh in the oven until golden in color.

نقوم بشوي الكبة في الفرن حتى تصبح ذهبية اللون.

It can be served with cucumber yogurt, pomegranate molasses, lemon, or soup to taste.

يمكن تقديمها مع لبن بالخيار أو دبس رمان أو ليمون أو شوربة حسب الذوق.

Roasted pine nuts

Prepare the filling by melting the ghee in a skillet, then add a finely chopped onion.

نقوم بتحضير الحشوة عن طريق تذويب السمنة في مقلاة، ثم نضيف بصلة ناعمة.

Add the minced meat (veal or lamb to taste) to the skillet and stir.

نقوم بإضافة اللحمة المفرومة (عجل أو خروف حسب الرغبة) إلى المقلاة ونقلب.

Season the filling with salt, black pepper, and a pinch of cinnamon

نقوم بتتبيل الحشوة بالملح، الفلفل الأسود، قليل من القرفة

Add the toasted pine nuts to the filling and stir well

نضيف الصنوبر المحمص الي الحشوة ونقلب جيدا

Allow the filling to cool completely, making sure it is free of liquid.

نترك الحشوة لتبرد تمامًا ونحرص على أن تكون خالية من السوائل.

Mince the kibbeh in the mincer three times, twice with the coarse side and once with the fine side.

Shape the kibbeh as shown in the video, then put the filling, and close it well, using water to prevent cracks.

نقوم بتشكيل الكبة بالطريقة الموضحة بالفيديو  من ثم نضع الحشوة، ونغلقها جيدًا.مع استخدام الماء لمنع التشققات

Fry the kibbeh in heavy oil until cooked and then serve with lentil soup

نقوم بقلى الكبة في زيت غزير حتى تنضج ثم نقدمها مع شوربة العدس

Note: We can freeze the amount we need for the time of use, by distributing the kibbeh kernels in a tray and placing it in the freezer, and after 6 hours we put the kibbeh in bags and store it in the freezer in quantities as needed.

ملحوظة: يمكن  تجميد الكمية التي  نحتاجها لوقت الاستخدام، حيث  بتوزيع حبات الكبة في صينية ونضعها في الفريزر، وبعد 6 ساعات نقوم بوضع الكبة في أكياس وتخزينها في الفريزر بكميات حسب الحاجة.

Mince the meat and fat together in a meat grinder until you get a homogeneous mixture.

نقوم بفرم اللحم والدهون معاً في ماكينة فرامة اللحمة حتى نحصل على خليط متجانس.

نضيف دبس الفليفلة ومعجون الطماطم

We add the paprika, seven spices (Aleppo spice mix), black pepper, coriander, cumin, sweet chili powder, hot chili powder, nutmeg, garlic, and salt, and mix them well.

نقوم بإضافة جميع البهارات (بابريكا، سبع بهارات، فلفل أسود، كزبرة، كمون، فليفلة حلوة وحارة، جوزة الطيب) والثوم المهروس والملح حسب الرغبة.

If you like, you can add pine nuts to the mixture.

نقوم بإضافة الصنوبر إذا رغبنا.

Knead the ingredients well, and add water and vegetable oil to make it easier to knead.

نقوم بعجن المكونات جيداً، و نضيف الماء والزيت النباتي لتسهيل العجن.

We stuff the mixture into the salted and dried sheep intestines as shown in the video

Shape the sausage using your hand, a special sausage forming device, or the method shown in the video

نقوم بتشكيل النقانق باستخدام اليد أو جهاز خاص لتشكيل النقانق أو بالطريقة الموضحة بالفيديو

Once stuffed, we can either cook the sausages right away or freeze them for later use.

يمكن تخزين النقانق في الفريزر أو طبخها مباشرة.

Notes in the recipe:  
Fat percentage: The fat content in the meat mixture should be 30%.  
Intestine size: Special lamb intestines should be used for stuffing, salted and dried.  
Shoulder meat was used in this recipe.

We cook the pasta according to the time indicated on the package, adding salt and oil to the water.

نقوم بسلق المعكرونة وفقاً للمدة المحددة على العبوة، مع إضافة الملح والزيت في ماء السلق.

We leave the pot uncovered so the pasta does not stick, then drain the pasta.

نترك المعكرونة دون تغطية الطنجرة حتى لا تلتصق. ثم نصفي المعكرونة.

In a hot pan, we heat the ghee and add the chopped onions and ground meat, seasoning with salt and black pepper.

في مقلاة ساخنة، نقوم بتسخين السمنة ثم نضيف البصل المفروم واللحمة المفرومة، ونضيف الملح والفلفل الأسود حسب الذوق.

To make the white sauce, we mix the yogurt with salt, cumin, lemon juice, garlic, tahini, and olive oil very well.

لإعداد الصوص الأبيض، نقوم بخلط اللبن (الروب) مع الملح والكمون وعصير الليمون والثوم والطحينة وزيت الزيتون جيدًا.

We add the pasta to the white sauce and stir well to coat the pasta evenly.

نضيف المعكرونة إلى الصوص الأبيض ونقلب جيداً حتى تمتزج المعكرونة مع الصوص.

We place the pasta in a serving dish, then add the sautéed meat and onions on top.

نقوم بوضع المعكرونة في طبق التقديم، ثم نضيف تقلاية اللحم والبصل على الوجه.

For garnish, we sprinkle parsley, pomegranate, paprika, and pine nuts on top.

للتزيين، نقوم برش البقدونس والرمان والبابريكا والصنوبر على الوجه.

Prepare the yogurt:
Mix the yogurt with cornstarch , crushed garlic, salt, and white vinegar in a cold bowl

تحضير اللبن:
نخلط اللبن مع النشاء ، الثوم المهروس، الملح، والخل الأبيض في وعاء بارد.

Place the mixture on the stove and stir continuously until it thickens. You can add chicken broth if desired.

نضع الخليط على النار مع التقليب المستمر حتى يتكاثف الخليط، ويمكن إضافة مرق الدجاج إذا رغبت.

Prepare the steak slices:
In a pan, heat butter with olive oil, then add lamb fat and a whole head of garlic.

تحضير الشرحات:
في مقلاة، نضع الزبدة مع زيت الزيتون، ثم نضيف لية الغنم مع رأس الثوم كاملًا.

Add salt and black pepper to the steak slices and stir until golden brown
