Ingredients

  • 1.5CupCoarse semolina
  • 1Tablespoons (tbsp)All-purpose flour
  • 1Grams (g) Instant yeast
  • 0.5PinchSalt
  • 1Tablespoons (tbsp)Buttermilk
  • 0.25CupMilk
  • 0.75CupWarm water
  • 1Tablespoons (tbsp)Pistachio
  • 1PinchDamask Roses
  • 3Cupwater
  • 6CupSugar
  • 0.5Psc.lemon
  • 3Teaspoons (tsp)cardamon

Steps

    Mix the dry ingredients (semolina, flour, yeast, and salt) together well.

    Add the wet ingredients (yogurt, liquid milk, warm water) to the dry mixture and mix until the dough is smooth.

    Cover the dough with plastic wrap and leave it to rest for 30 to 45 minutes

    To make the syrup, boil the water with the sugar in a pot, then add the lemon juice and cardamom pods and let it boil for 5 minutes.

    Strain the syrup and let it cool.

    Place the dough in a piping bag with a special 10-sized nozzle.

    Pipe the dough into the hot oil in a circular shape, closing the end of the circle upwards to maintain the shape after frying.

    After frying, drain the sweet and place it in the cold syrup for 7 minutes. Then garnish with pistachio and rose petals if desired.
