Wash the thyme leaves thoroughly in cold water several times, as hot or warm water damages the green color and makes the leaves fragile; the colder the water, the better the result.

Place the leaves between a clean towel or paper towels and gently press to remove excess water without squeezing or rubbing, to avoid tearing the leaves during washing and draining.
