Place the Greek yogurt in a bowl, add instant coffee (start with a small amount) and sweetener or honey to taste, then whisk until smooth and creamy with a coffee flavor.

Dissolve some instant coffee in hot water to make a light plain coffee for dipping the rice cakes.

Quickly dip one rice cake in the hot coffee and place it at the bottom of the serving dish. Spread a thin layer of peanut butter on top, then add a layer of coffee yogurt mixture.

Repeat the layering for three layers: coffee-soaked rice cake → peanut butter → coffee yogurt mixture, finishing with a top layer of yogurt mixture.
