Ingredients

  • 250CupCooked chickpeas
  • 1CupOlive oil
  • 1Psc.Onion
  • 2ClovesGarlic
  • 1Psc.Tomato
  • 1Psc.Red bell pepper
  • 1PinchSalt
  • 1To TasteBlack pepper
  • 1Teaspoons (tsp)Cumin
  • 1Teaspoons (tsp)Ground Coriander
  • 1Teaspoons (tsp)Dried Basil
  • 1Tablespoons (tbsp)Sumac
  • 1Teaspoons (tsp)Smoked paprika
  • 1BunchParsley

Steps

    In a pan, add olive oil and the boiled chickpeas

    Add salt and smoked paprika. Stir for 3 minutes until you smell the paprika aroma.

    Remove the chickpeas from the pan.

    We slice the onion into rings and then chop the garlic.

    In the same pan, add olive oil, then sauté the onion with the garlic.

    We chop the tomato and red pepper in a food processor.

    After the onion turns slightly brown, add the tomato and red pepper (blended in a food processor).

    Let the mixture simmer, then add black pepper, coriander, cumin, sumac, and basil.

    Add the roasted chickpeas and stir well.

    Let the mixture cook for 2 minutes, then serve and top with parsley.
