Ingredients

  • 4Kilograms (kg)Dark bulgur
  • 2.5CupBoiling Water
  • 2Psc.Onion
  • 2Psc.Tomato
  • 1Tablespoons (tbsp)Tomato paste
  • 2Tablespoons (tbsp)Pepper paste
  • 1PinchSalt
  • 1To TasteBlack pepper
  • 1Tablespoons (tbsp)Sumac
  • 1Teaspoons (tsp)Cumin
  • 2Teaspoons (tsp)Crushed red pepper
  • 1ClovesMinced garlic
  • 1CupPomegranate molasses
  • 1CupOlive oil

Steps

    Place the bulgur in a large bowl and pour boiling water over it.

    Cover the bowl and leave the bulgur to soak for 15 minutes until the water is absorbed and the bulgur is tender.

    Add the grated and drained onions, crushed tomatoes, tomato paste, tomato paste, capsicum molasses, salt, black pepper, sumac, cumin, red chili pepper (if using), and crushed garlic to the soaked bulgur.

    Add the pomegranate molasses and olive oil to the mixture.

    Mix the ingredients well and knead with a mixer until smooth, then let it rest for 15 minutes.

    Next, shape the mixture into small balls or fingers, pressing them lightly to give them the traditional shape.
