Ingredients

  • 8Cupwater
  • 2Tablespoons (tbsp)Coarse salt
  • 1CupSugar
  • 0.25Teaspoons (tsp)Citric acid
  • 1Grams (g) Mushroom

Steps

  1. 1

We place the water, coarse salt, sugar, and citric acid in a pot over the heat until it starts to boil.

  2. 2

We wash the mushrooms thoroughly with water to remove any dirt or impurities

  3. 3

We dry the mushrooms using kitchen paper towels.

  4. 4

We cut the mushrooms into medium-sized pieces.

  5. 5

We add the sliced mushrooms to the boiling brine (water with salt, sugar, and citric acid).

  6. 6

We stir the mushrooms with a wooden spoon and skim off the white foam that forms on the surface using a slotted spoon.

  7. 7

We let the mushrooms boil for only two minutes.

  8. 8

We immediately place the hot mushrooms into sterilized glass jars.

  9. 9

We pour the same boiling water over the mushrooms in the jars until fully covered.

  10. 10

We seal the jars tightly with sterilized lids.

  11. 11

We turn the jars upside down and leave them overnight to cool completely and form a vacuum seal.

  12. 12

The next day, the mushrooms are ready and can be stored at room temperature for up to one year without spoiling or darkening.

  13. 13

Tips Make sure the jars and lids are properly sterilized before use to prevent spoilage. The preserved mushrooms can be used in cooking just like canned mushrooms. Store the jars in a cool, dry place away from direct sunlight.
