Prepare the date base: Press the pitted dates into mini cupcake tray molds until a firm base is formed.

Add the filling: Spread pistachio paste on half of the date cups and peanut butter on the other half.

Add the nuts: Sprinkle chopped pistachios over the cups filled with pistachio paste and chopped peanuts over those filled with peanut butter.

Cool the cups: Place the tray in the refrigerator while preparing the chocolate layer.

Melt the chocolate: In a microwave-safe bowl, melt the chocolate with coconut oil in 20-second intervals, stirring between each interval until completely smooth.

Cover with chocolate: Pour the melted chocolate over each cup, ensuring they are fully coated.

Cool and serve: Place the tray in the refrigerator for 30 to 60 minutes until the chocolate is set, then remove the cups and serve.
