Blend red pepper, green pepper, white onion, green onion, two garlic cloves, lemon juice, olive oil, a can of pineapple juice, salt, pepper, coriander, cardamom, paprika, and onion powder in a food processor. Blend well, then strain the mixture to get the liquid marinade

Cut the potatoes, onions, and any other vegetables you like. Add some of the marinade and the same spices to them, then mix everything well.

Use a whole chicken (in this recipe, we used frozen chicken). Stuff the chicken with the marinade, then rub it well under the skin to ensure the flavors penetrate.

Pour some of the liquid marinade over the chicken and cover it with parchment paper and aluminum foil. Bake it in the oven at 180°C (350°F) for 1 hour on medium heat.

Simmer the strained liquid marinade on low heat until it thickens and becomes more concentrated.

After the chicken is cooked, baste it with the thickened marinade to give it a nice golden color.

Leave the chicken to brown a bit in the oven or under the grill to get a crispy, golden finish.

Remove the chicken from the oven and drizzle some of the remaining marinade on top before serving.
