Steps

    First, we cut 3 onions into thin slices and add a pinch of salt to wilt them, then we heat vegetable oil in a pot, and when it's hot, we add the onion slices and stir them until they wilt and turn golden brown.

    We add the chicken pieces to the onions and stir them well until they brown slightly on all sides, then we add the bay leaves, dried lime, ginger, ground cloves, ground cardamom, kabsa spices, black pepper, cinnamon, and hot peppers, and we stir the ingredients together.

    We add enough water to the pot to cover the chicken completely, then we let it cook over medium heat until the chicken is fully cooked. After the chicken is cooked, we remove it from the pot and place it in a suitable baking dish, straining the broth from the ingredients.

    We add the rice to the broth (according to the desired quantity) and let it cook over medium heat until done. Once the broth and rice are ready, we place the dish in the oven for 15-20 minutes or until the chicken turns golden brown.

    In a small bowl, we mix half a cup of tahini with a quarter of a minced garlic clove, lemon juice, and salt, then gradually add water until we achieve the desired consistency. When the time is up, we take the dish out of the oven and serve the chicken with rice and tahini sauce on the side, optionally garnishing it with toasted almonds or pine nuts.
