We mix the sauce ingredients (1/4 cup tahini, 1/4 cup lemon juice, 2 tablespoons water, 2 tablespoons mayonnaise, 1-2 crushed garlic cloves, 1 tablespoon pomegranate molasses, 2-3 tablespoons finely chopped parsley, salt, and pepper to taste) well and set it aside.

In a well-heated pan, we add butter and olive oil, then place the steak, seasoned with salt and pepper on both sides, and cook it for 7-8 minutes on each side.

We let the steak rest for 5 minutes, then slice it into strips.

We serve the salad in a wide serving dish, starting with the lettuce and arugula, then adding the red cabbage, tomatoes, and thinly sliced onion, sprinkled with sumac and a little olive oil. We top it with parsley, mint, steak strips, a sprinkle of sumac, and finally the tahini sauce.
