    We cook the red quinoa in boiling water until it doubles in size and becomes tender, then we drain it and leave it to cool completely.

    We add the corn and the quinoa to a large bowl.

    We add the red kidney beans to the bowl.

    We add the chopped red bell pepper to the mixture.

    We add the halved cherry tomatoes.

    We add the chopped parsley and cilantro.

    We add the diced avocado.

    We place the Greek yogurt in the blender along with the cilantro, lemon juice, garlic clove, salt, and black pepper.

    Add the olive oil, oregano, cumin, smoked paprika, dried coriander, vinegar, and honey to the blender.
