Soak the chickpeas for 9 hours.

Wash the chickpeas thoroughly.

Place the chickpeas in a pot with a small onion, two garlic cloves, bay leaves, and room-temperature water.

Cook the chickpeas on low heat, skimming off any foam that forms.

Continue cooking until the chickpeas become very soft.

Strain the chickpea water and freeze it in ice cube trays.

Rinse the chickpeas well and let them cool completely.

Place the chickpeas in a food processor with tahini, lemon juice, one garlic clove, and salt.

Blend the mixture while gradually adding the frozen chickpea ice cubes until smooth.
