  • 0.25CupOlive oil
  • 1Teaspoons (tsp)Mixed spices
  • 2Cupwater
  • 1CupYogurt
  • 1ClovesMinced garlic
  • 1BunchGreen Coriander

Steps

    Cut all the vegetables into small cubes

    Line a baking tray with parchment paper, then place the zucchini, potatoes, and white onion on it

    Season the vegetables with olive oil, black pepper, salt, and mixed spices.

    Mix the vegetables well to ensure they are evenly coated.

    Place the tray in the oven and roast the vegetables for 20-25 minutes

    Transfer the roasted vegetables to a blender.

    Add water and blend until smooth.

    Add yogurt and garlic (optional). and blend the mixture well again.

    Transfer the mixture to a saucepan on the fire and heat it well, adding salt to taste.

    Pour the soup into bowls.

    Garnish the soup with fresh coriander and serve.
