In a bowl, mix vinegar, yogurt, and vegetable oil. Add shawarma spices and salt, then mix well.

Prepare onion juice by chopping the onions in a food processor and then squeezing them to extract the juice.

Mix the onion juice with the marinade mixture.

Choose your preferred type of meat; it’s recommended to use veal and add lamb to enhance the flavor.

Slice the meat into thin strips against the grain to avoid tough fibers. Add the shawarma marinade to the meat and mix well, then refrigerate for one hour to a full day.

To prepare tahini sauce, mix tahini, yogurt, lemon juice, garlic, and salt.

Heat oil in a pan, then add the lamb fat and let it render all the fat before removing it. Next, add the marinated meat and cook on high heat without stirring for a few minutes to form a crust.

After it browns, stir the meat until it’s fully cooked.

Place the shawarma in flatbread with the sauce, then put it in a pan with oil until it turns golden, as shown in the video. Enjoy!
