    Wash the potatoes well, leaving the skin on.

    Cut each potato into halves, then into wedge slices.

    Place the wedges in a bowl and pour boiling water over them.

    Add 3 tbsp salt to the water and soak for 20 minutes.

    Drain and dry the potatoes completely with paper towels.

    Mix olive oil with all spices in a separate bowl.

    Add cornstarch to the seasoning mix and combine well.

    Coat the dry potato wedges fully with the mixture.

    Arrange the wedges on a non-stick baking tray without overlapping.

    Bake in a preheated oven at 200°C for 30 minutes until crispy and golden.
