- 2Tablespoons (tbsp)Psyllium husk
- 0.25Liters (L)Hot water
- 0.25CupOlive oil
- 2PinchSalt
- 2CupYogurt
- 1CupCold water
- 500Grams (g) Ground meat
- 1Psc.Onion
- 1To TasteBlack pepper
- 1Teaspoons (tsp)Cumin
- 1Teaspoons (tsp)Gluten-Free sumac

Soak psyllium husks in hot water for 10 minutes until psyllium gel is formed

Place the flour and yogurt in the bowl of a stand mixer.

Add the psyllium gel, olive oil, and 1 teaspoon of salt to the flour.

Gradually add very cold water and knead until a cohesive dough forms.

Divide the dough into equal-sized balls and lightly coat each with oil.

Cover and let the dough rest for 1 hour.

Chop the onion into small cubes

In a pan, sauté chopped onions with the ground meat until the meat is cooked and all liquids have evaporated.

Season the meat with black pepper, cumin, sumac, and salt, then mix well.

Carefully roll out each dough ball between two sheets of parchment paper to avoid tearing.

Spread the meat mixture evenly over the dough.

Roll the dough into a roll and then shape it into a spiral.

Place the spirals on a baking tray lined with parchment paper and bake in a preheated oven at 180°C (356°F) until golden.
