In a baking tray, place eggplant, onions, bell peppers, and partially cooked potatoes, then drizzle a little oil over them and bake in the oven. Also, roast some red bell peppers and a head of garlic.

Then prepare the mixture by placing the garlic cloves, green chili, vinegar, and salt into a blender or food processor and blend them together.

Next, prepare the sauce by adding tahini, lemon juice, roasted peppers, roasted garlic, and spices. Mix them well until combined.
