Steps

    We slice the eggplant into medium-thick, longitudinal slices.

    Mix the eggplant slices with a pinch of salt and a little olive oil until well coated.

    Air-fry the eggplant slices until soft and golden, then let them cool.

    Prepare the filling by heating a small amount of oil in a pan, then add chopped onions and sauté until softened.

    Add minced garlic and stir for a few seconds until fragrant.

    Add chopped bell peppers and grated carrots, stirring until the vegetables soften.

    Add the minced meat and cook until fully done

    Season the filling with mixed spices, black pepper, regular and smoked paprika, onion powder, garlic powder, and oregano, then mix well.

    Take each grilled eggplant slice, add a suitable amount of the filling, and roll it into a cylinder shape.

    Arrange the eggplant rolls in a suitable baking dish

    To prepare the sauce, we mix liquid cream with water and tomato paste. (The amount of cream should be equal to the amount of water.)

    Season the sauce with oregano, onion powder, garlic powder, paprika, and black pepper, and mix well until combined.

    Pour the sauce evenly over the eggplant rolls.

    Place the dish in a preheated oven on the bottom rack and let it simmer.

    Lower the heat and leave it for an additional 10 minutes to allow the flavors to blend
