Ingredients

- 0.5Kilograms (kg)Chicken Breast
- 1Psc.White Onion
- 1Psc.Red bell pepper
- 1BunchParsley
- 1Teaspoons (tsp)Paprika
- 1Teaspoons (tsp)Cumin
- 1PinchSalt
- 1To TasteBlack pepper
- 1CanCheddar

You can either boil the potatoes or wrap them in foil and roast them without salt. Spread some salt on a baking tray and arrange the potatoes on top.

Roast the potatoes in a preheated oven at 200-220°C for about 1 hour (top and bottom heat).

Once the potatoes are cooked, cut them in half and scoop out the insides.

In a pan, add a tablespoon of olive oil.

Chop the onion and bell pepper finely and sauté them in the oil until softened.

Cut the chicken into small cubes and add it to the mixture.

Add the spices (paprika, cumin, salt, and pepper) and stir until the chicken is cooked.

Turn off the heat and add the chopped parsley, stirring to combine.

Fill the potato skins with the prepared filling.

Sprinkle shredded cheddar cheese on top and bake in the oven for 5-10 minutes until the cheese melts.
