  • 1PinchMinced Green onions
  • 1Psc.Kalamata olives
  • 0.25CupOlive oil
  • 0.25Psc.Lemon juice
  • 2CupHoney
  • 1PinchSalt
  • 1To TasteBlack pepper
  • 1Tablespoons (tbsp)Vinegar
  • 2Tablespoons (tbsp)Dijon mustard

    Wash the quinoa thoroughly and let it drain.

    Add 1 tablespoon of butter or olive oil in a small pot, then add the quinoa and stir for 3-4 minutes.

    Pour 2 cups of boiling water over the quinoa, lower the heat, and let it cook until tender and fluffy.

    Roast your favorite vegetables (such as eggplant, zucchini, red pepper, tomatoes, and red onion).

    Mix the roasted vegetables with the cooked and cooled quinoa.

    Add chopped parsley, green onions, and Kalamata olives.

    Prepare the dressing by mixing olive oil, lemon juice, Dijon mustard, honey, vinegar, salt, and pepper.
