    Wash the apricots well and remove the pits.

    Place the apricots in a bowl, add the sugar, cover, and leave in the refrigerator overnight until the juices are released.

    The next day, cook the apricots with their released juice over medium heat for 15 minutes.

    Skim off the foam that forms on the surface during cooking.

    Add ½ teaspoon citric acid and mix well.

    Remove from heat and let the mixture cool completely.

    Lightly grease the baking tray with olive oil.

    Spread the apricot mixture in a thin, even layer, preparing it for the drying process.

    For sun drying: Dry under direct sunlight for 2 to 3 days until completely dry.

    For oven drying: Dry in the oven at 70°C for 3 to 4 hours until completely dry.
