Passion fruit cheesecake
Ingredients

We preheat the oven to a temperature of 170 degrees Celsius.

We toast the almond flour over the heat until it turns golden, then we add the butter.

We spread the mixture in individual cups or it can be placed in a lined baking tray.

We mix the ingredients for the second layer: mascarpone cheese, cream, powdered sugar, vanilla, lemon zest, and lemon juice.

mix in 2 tablespoons of passion fruit with them.

We whisk until the mixture becomes smooth and distribute it over the almond flour cups.

We put the cups in the fridge for 3-4 hours.

We put the pulp of the passion fruit with 2 tablespoons of sugar, 1/3 cup of water, and 1 tablespoon of arrowroot powder.

We leave the mixture on low heat for two minutes or until it reaches a syrup-like consistency.
