Ingredients

- 1Psc.Onion
- 1CupOlive oil
- 0.5Tablespoons (tbsp)Sumac
- 1Teaspoons (tsp)Cardamom powder
- 1Teaspoons (tsp)Cumin
- 1PinchSalt
- 1To TasteBlack pepper

Heat the pot, then add olive oil with a large amount of chopped onions and sprinkle with salt.

Add the whole chicken to the pot along with bay leaves and dried lime (lomi).

Cook the ingredients over medium heat for 45 minutes without adding water.

Add the cumin, cardamom, and sumac, and continue cooking for an additional 20 minutes (adding salt and black pepper as desired).

Remove the chicken from the pot and shred it.

Grate the cucumber and chop the garlic, then mix the cucumber, garlic, mint, salt and yogurt in a bowl.

Return the shredded chicken to the pot and cook for another 10 minutes.

Place the bread on a wooden board and cut it into triangles.

Place the chicken mixture on the bread triangles and roll them up.

Place the rolls on a baking tray, sprinkle with olive oil and sumac.

Bake for 10 minutes until golden brown.
