    We wash the lemons thoroughly to clean them.

    We peel the lemons using a vegetable peeler or grate only the yellow zest, making sure to avoid the white part as it causes bitterness.

    We place the lemon peel in a bowl.

    We add ½ kg of sugar to the peel and mix well so the aromatic oils are absorbed by the sugar.

    We remove the white pith from the peeled lemons as much as possible using a knife.

    We slice the lemons and try to remove the seeds while cutting.

    We place the lemon slices into the food processor.

    We add the lemon peel and sugar mixture to the processor and blend everything well.

    We strain the resulting mixture.

    We pour half of the lemon concentrate into a suitable freezer container.

    We add mint leaves to the remaining half.

    We blend the mint with the lemon concentrate using a hand blender for about 5 minutes to enhance the mint flavor.

    We add a drop of green food coloring (optional) to enhance the green color.

    We strain the mint-lemon concentrate and store it in another container.

    We seal both containers and place them in the freezer.

    When ready to serve, we add 1½ tablespoons of the concentrate (mint or plain) to a cup of cold water and adjust sugar to taste.
