- 1PacketPomegranate

Steps

Brush the eggplants with olive oil and air fry at 180°C for 15 minutes, flipping halfway.

In a pan, sauté the onion in oil until translucent, then add garlic and chili and stir.

Add green pepper and stir, then add tomato paste and red pepper paste.

Add the tomatoes, spices, and salt. Cover and simmer over low heat for 20 minutes.

Add sugar to the sauce and adjust salt if needed, then add the eggplants, cover, and simmer for an extra 5 minutes.

Garnish with parsley and pomegranate seeds. Serve with Arabic bread and enjoy!
