Steps

    In a pan over heat, add a little oil, then add the sausage and fry it until it takes on color.

    Remove the sausage, then add a little oil to the same pan, followed by the onion, garlic, and bell pepper.

    Add the sausage to the mixture, then season with salt, black pepper, cumin, coriander, a pinch of paprika, and some vinegar.

    Add the grated tomatoes mixed with two teaspoons of tomato paste, then add a little sugar, a cup of water, and a cube of broth. Let it simmer for 5 minutes until it thickens.

    After 5 minutes, add the pasta and stir. Cover the pan and let it cook for 10 minutes, then add a sprinkle of parsley.
