    We start by cutting the yellow watermelon into small cubes, then chop the lettuce and arugula into medium-sized pieces. We slice the cucumber into thin slices and the small onion into thin rings. We place the chopped fresh mint with the remaining ingredients in a large bowl.

    We add slices of mozzarella cheese and turkey or mortadella slices as desired, and mix all the ingredients well.

    To prepare the dressing, we mix olive oil with balsamic vinegar and lemon juice in a small bowl. We add mustard, honey, and salt to taste, along with a pinch of dried mint, and stir the dressing until combined.
