Ingredients

- 50Grams (g) Butter
- 1CupShredded coconut

We crack three eggs into a mixing bowl

We add one cup of sugar and the packet of vanilla to the eggs.

We whisk the mixture using a hand whisk until it becomes smooth and light in color.

We add ¼ cup of oil and mix gently.

We add ¾ cup of mango juice and mix until combined.

We place 2 cups of flour in a sifter, then add a pinch of salt and the packet of baking powder.

We sift the dry ingredients well.

We gradually add the sifted flour to the wet mixture and mix gently until just combined (avoid overmixing).

We pour the batter into a greased or parchment-lined cake pan.

We place the pan in a preheated oven at 180°C (356°F), top and bottom heat, and bake for 20 to 30 minutes depending on the oven.

Once the cake is done and slightly cooled, we spread mango jam on top.

We sprinkle shredded coconut over the top for decoration.

To prepare the mango jam: Chop two mangoes into cubes.

Place them in a pot with 1 cup sugar and 50 g butter.

Cook over low heat for 30 minutes until thickened.
