We peel the eggplant, cut it into cubes, and then fry it in deep oil.

In a pot over heat, we add oil, then add the chopped onions and garlic, and stir until they soften.

We add the ground meat, salt, black pepper, and red pepper, and stir them well.

We mix 2 tablespoons of tomato paste with 1.5 to 2 cups of water, then add it to the meat after it's cooked and let them simmer until it boils.

We add the fried eggplant, then toast the Arabic bread and set it aside.

To prepare the yogurt sauce, we add the yogurt, tahini, garlic, juice of two lemons, and salt, and stir well.
