Steps

    We place 100 grams of lamb fat (or olive oil or ghee) in a pan over low heat until it turns golden and the fat is rendered out

    We add one large onion, sliced, and 10 small garlic cloves.

  3. 3

    We stir the ingredients until they reach the desired color (the color of a wasp's wing).

  4. 4

    We lower the heat and add 500 grams of fresh lamb liver and small pieces of spleen, which we have previously washed with cold water.

    We season the liver with a tablespoon of salt, a teaspoon of pepper, and a tablespoon of red pepper (to taste).

    We cook the liver on high heat for only 2 minutes

    We turn off the heat.

    We garnish the liver with parsley and lemon.

    We serve with bread.
