في وعاء، اخلط جميع المكونات.

Knead the dough ingredients (1.5 cups flour, 150 g softened butter, 4 Kiri cheese squares, 2 tablespoons powdered sugar, a pinch of salt) until well combined

نقوم بعجن مقادير العجينة (1.5 كوب طحين، 1.5 أصبع زبدة حوالي 150 جرام، 4 حبات جبنة كيري، 2 ملعقة سكر بودرة، رشة ملح) حتى تتماسك جيدًا.

Roll the dough into small balls and place them in tart molds as shown.

نكّور العجينة ونضعها في قوالب التارت كما هو موضح.

To prepare the filling, blend together (3/4 cup soft pitted dates, 3/4 can sweetened condensed milk, 6 Kiri cheese squares, 1 teaspoon cinnamon, 1 small can of cream) until smooth.

لتحضير الحشوة، نخفق في الخلاط (1 كوب إلا ربع تمر منزوع النواة وطري، 3/4 علبة حليب مكثف محلى، 6 حبات جبنة كيري، 1 ملعقة صغيرة قرفة، علبة قيمر صغيرة).

Transfer the filling to a piping bag for easy distribution, then pipe it onto the dough in the molds.

نضع الحشوة في كيس الحلواني لتوزيعها بسهولة ثم نضعها فوق العجينة داخل القوالب

Add one pecan or walnut piece on top of each tart.

نضع حبة جوز البيكان أو جوز عادي على كل حبة تارت.

Bake in the oven at 180°C (356°F) for 10 minutes on the lower rack.

ندخل القوالب إلى الفرن على درجة حرارة 180 درجة مئوية من الأسفل لمدة 10 دقائق.

Turn on the broiler for 2 minutes to lightly brown the top.

نفتح الشواية لمدة دقيقتين حتى يتحمر الوجه.

Let the tarts cool, then sprinkle with powdered sugar.

نترك التارت ليبرد ثم نرشه بسكر بودرة.

نقوم بتقطيع الكوسا والباذنجان إلى مكعبات كبيرة.

نقوم بتقطيع البصل على شكل جوانح.

Place the tomatoes in hot water for a few minutes, then peel and dice them.

نضع الطماطم في ماء ساخن لبضع دقائق ثم نقشرها ونقطعها مكعبات.

In a pot over medium heat, melt 2 tablespoons of ghee and sauté the lamb until browned

في قدر على النار، نضع ملعقتين كبيرتين من السمنة ونقلي اللحم حتى يتحمّر.

Add the onions and cook with the lamb until soft and golden.

نضيف البصل ونقلبه مع اللحم حتى يذبل ويصبح لونه ذهبيًا.

Add a layer of zucchini, then add the tomato paste and lemon juice.

نضيف طبقة الكوسا، ثم نضيف معجون الطماطم وعصير الليمون.

Add the eggplant and diced tomatoes, season with salt and pepper, and optionally add a pinch of mixed spices.

نضيف الباذنجان والطماطم المقطعة، ونرش الملح والفلفل، ويمكن إضافة رشة بهارات حسب الرغبة.

Cover the pot and simmer on low heat until the meat is fully cooked.

نغطي القدر ونتركه على نار هادئة حتى تنضج اللحمة تمامًا.

Add the garlic and dried mint at the end, cover for 5 minutes, then serve.

نقوم بشوي الباذنجان في الفرن حتى يطرى ويتحمر.

لتحضير صلصة الفتة، نقوم بخلط اللبن، الطحينة، الثوم، عصير الليمون، صلصة البيستو مع قليل من الماء. نضيف الملح والفلفل حسب الذوق.
