Start by making the tartar sauce: In a bowl, add the mayonnaise, Dijon mustard, chopped pickles, chopped dill, a dash of black pepper, and a squeeze of lemon juice

Mix well until smooth and set aside in the fridge.

In another bowl, combine the flour, starch, and baking powder, then season with paprika, salt, and pepper.

Add 1 cup of cold water or soda with ice and whisk until a smooth, thick batter forms.

Dip the fish fillets into the batter, coating them fully on all sides.

Heat a generous amount of oil in a pan over medium to high heat.

Gently place the battered fish into the hot oil and fry until golden and crispy.
