Steps

    Prepare sweet or hot red bell peppers, preferably mix both types.

    Slice the peppers lengthwise and remove the green stem, seeds, and white fibers.

    Slice them lengthwise; if they are too long, cut them crosswise.

    Spread the pepper pieces on a tray, and dry them in the sun, in front of a fan, or in an oven at 80°C for 8-9 hours.

    Place the dried peppers in a food processor. Add 1 tsp of salt for every 0.5 kg of peppers.

    Blend the ingredients two or three times in the processor.

    Add 2-3 tbsp of olive oil for every 0.5 kg of peppers.

    Use the food processor again, but don't blend too much; leave some chunks visible.

    Store the paste in jars, preferably in the freezer or fridge, adding olive oil on top.
