Steps

    Prepare the crumble topping by mixing flour, brown sugar, melted butter, and cinnamon until sandy in texture, then chill.

    Mix egg, vanilla, and white sugar in a bowl.

    Gradually add oil, then coffee and milk, whisking until smooth.

    Add flour, baking powder, cinnamon, and salt, and mix gently until combined.

    Divide batter into lined muffin cups and sprinkle crumble on top.

    Bake in a preheated oven at 195°C for 20–23 minutes.
