Chicken Salad

We season the chicken breasts with olive oil, salt, black pepper, and mashed garlic. We leave the chicken in the marinade for at least 30 minutes.

We grill the chicken breasts on the grill or in a skillet over medium heat until fully cooked, about 6-7 minutes on each side.

While cooking the chicken, we prepare the salad. We mix the lettuce, tomatoes, red onion, mint, radishes, and either red beans or corn in a large bowl.

In another bowl, we mix the lemon juice with salt, olive oil, and oregano or dried mint. Then we add the yogurt and mix well until all the ingredients are blended and the dressing becomes smooth.

Once the chicken breasts are cooked, we remove them from the heat and let them rest for a few minutes to cool slightly. Then, we slice them into thin strips and arrange them on top of the salad in the dish.

We drizzle the salad dressing we prepared over the chicken slices and salad, then garnish the dish with some fresh mint leaves if desired. We serve the salad with the chicken on a plate and enjoy the delicious taste!
