    We rinse the hibiscus petals well using a strainer under running water to remove any dust or dirt.

    We spread the washed hibiscus evenly on a wide tray or baking sheet.

    We dry the hibiscus either: In a preheated oven on high heat for 5 minutes, stirring continuously, Or under the sun for 1 to 2 days until fully dry and still vibrant red.

    Once completely cooled, we grind the hibiscus in a grinder until it becomes a fine powder.

    We sift the hibiscus powder using a fine sieve—this can be repeated twice for extra smoothness.

    We measure out the powder (about 1 scant cup) and add 2 scant cups of sugar.

    We mix the hibiscus powder and sugar together until fully combined.

    If we’re storing a large quantity for a long time, we add a very small teaspoon of citric acid as a preservative.

    We store the hibiscus powder in an airtight jar or container in a dry place, outside the fridge.

    To Prepare the Hibiscus Drink Add 1 tablespoon (or 2 heaping teaspoons) of the powder to a glass of cold water and stir well.

    Add ice cubes as desired, and it’s ready to serve.
