Ingredients

  • 3Teaspoons (tsp)Dried Thymus
  • 2CupOlive oil

Steps

    Mix the whole wheat flour, water, yeast and salt in a large bowl until the ingredients are well combined and the dough is loose and sticky.

    Cover the bowl and let the dough rise at room temperature for 4-5 hours.

    Stretch and fold the dough 2-3 times during the rising period to improve its texture.

    Transfer the dough to an airtight container and place in the refrigerator for slow fermentation overnight. can also be kept in the refrigerator for 3-4 days

    When ready to use, take the dough out of the fridge and divide it into equal portions.

    Shape each portion into a ball and let it reach room temperature for an hour before baking.

    Preheat the microwave oven to 200 degrees Celsius.

    Mix the thyme with the olive oil until combined.

    Roll out the dough portions on baking paper, then evenly spread the thyme and olive oil mixture on top.

    Transfer the manakish onto a baking tray, keeping the baking paper underneath for easy transfer.

    Bake for 15-18 minutes or until golden brown, then serve warm.
