    Grease the frying pan lightly with olive oil.

    Place the homemade bread pieces in the pan.

    Spread the local cheese and mozzarella over the bread.

    Drizzle olive oil over the cheese.

    Sprinkle mint and salt on top.

    Cover the pan and leave it on medium heat for 2 minutes.

    If the bottom is golden and the cheese has melted, remove it. If not, cover again briefly. Slice the manakish and serve hot.
