We mix 3 cups (435 g) of whole wheat flour, add 1 cup of water, half a cup of extra virgin olive oil, and a pinch of natural salt. Then we knead the ingredients together for 7-10 minutes until the dough is soft and non-sticky.

We let the dough rest for half an hour, then we divide it into small balls and let them rest for 10 minutes.

For the cheese filling: We mix 250 g of goat cheese or cottage cheese with a quarter cup of chopped cilantro and a quarter cup of chopped mint.

For the meat filling: In a skillet over heat, we mix 250 g of ground meat with chopped onion, 2 boiled eggs, a quarter cup of chopped cilantro, a quarter cup of chopped parsley, and salt, black pepper, and cumin to taste.

We shape the dough using a cutter or a fork, and we fill it either with the meat filling or the cheese filling.

We brush them with egg and place them in a preheated oven at 180 degrees Celsius for 20 minutes.
