Start by adding flour and water in a clean glass jar, then mix and cover loosely.

Feed the mixture daily with the same amount of flour and water.

We get rid of half of the yeast on the third and fifth days, then add the flour and water and cover.

We take a portion of the yeast on the sixth day for use and feed the rest as usual.

We test the readiness of the yeast on the seventh day by putting a little of it in water.

We consider the yeast ready if it floats on the surface of the water.

Shishbarak
Shishbarak or Shushbarak a well known levantine dish made with unleavened dough which is rolled into a thin layer then cut into small rounds .
