Steps

    Boil the eggs in hot water for about 10 minutes until fully cooked, then peel and cut them in half lengthwise.

    In a pan over medium heat, heat a suitable amount of olive oil.

    Add the chopped onion and crushed garlic, and sauté until they soften slightly.

    Add the chopped green pepper and continue stirring.

    Add the tomato paste and stir well to combine.

    Add the spices (paprika, black pepper, and salt), then add the chopped tomatoes and stir again.

    Cover the pan, reduce the heat, and let the mixture simmer for 5 minutes.

    Uncover the pan, place the boiled egg halves on top, sprinkle mozzarella cheese and chopped parsley

    Cover the pan again for 1 minute until the cheese melts, and serve immediately.
