Sweet potato bundt cake

- 0.5CupBrown sugar
- 0.5Tablespoons (tbsp)Vegetable oil
- 0.5Milliliters (mL)Melted butter
- 1Teaspoons (tsp)Vanilla
- 2CupMashed Sweet potato
- 3CupFlour
- 1Tablespoons (tbsp)Baking powder
- 1Teaspoons (tsp)Baking soda
- 0.25PinchSalt
- 1.5Teaspoons (tsp)Cinnamon
- 0.5PinchNutmeg
- 0.75CupMilk
- 1Tablespoons (tbsp)Vinegar

Preheat the oven to 180°C Grease the bundt pan with tahini paste (or you can also grease it well with butter and dust some flour).

In a large mixing bowl, add the eggs and sugars, and whisk until doubled in size (about 4-5 minutes) Add the vanilla, melted butter, oil, and mashed sweet potatoes and mix well until everything is combined.

In another bowl, mix all the dry ingredients (flour, baking powder, baking soda, spices, and salt).

Begin adding the dry ingredients alternately with the milk, starting and ending with the dry ingredients, mixing after each addition.

Fold in the last amount of flour using a spatula, making sure it's well combined, but do not overmix.

Pour the cake batter into the prepared pan and bake for about 1 hour.

Let the cake cool for 5 minutes in the pan before flipping it onto a wire rack to cool completely. Drizzle with caramel sauce if desired.
